Quick Bean Soup
1 large onion
2 cloves garlic
1 lb. lean ground beef
1-28oz. can crushed tomatoes, undrained
6 cups beef broth
1/2 cup uncooked orzo (or rosamarina pasta)
2 cups frozen peas, carrots and corn blend
1/4 cup chopped fresh parsley
Chop the onion. Mince or crush the garlic. Cook beef, onion
and garlic in a large skillet until beef is browned. Drain the
drippings. Place beef in a stock pot or dutch oven. Add tomatoes
and beef broth. Simmer uncovered 15 minutes. Add orzo and vegetables.
Simmer 15 minutes more. Add fresh parsley just before serving.
