Easy, Yummy Pasta Dish
1 - 16 oz pkg. penne pasta
2 Tbsp. olive oil
1 Tbsp. minced garlic
2 - pint containers cherry tomatoes - halved
1/3 cup water
½ tsp salt
¼ tsp pepper
1 - 8oz pkg. mozzarella cheese - diced**
¼ cup thinly sliced fresh basil
Put water on for pasta. Add pasta when water is at a hard boil.
Cook according to pkg. Directions.
Heat olive oil in pan.
Add garlic and cook about 30 seconds until aromatic.
Stir in halved tomatoes and cook for 1 minute.
Add 1/3 cup water and bring mixture to a boil.
Stir in salt and pepper.
Remove from heat and keep warm in pan.
Drain pasta and place in a large bowl.
Stir in tomato mixture and mozzarella cheese.
Sprinkle with basil.
** I use shredded cheese for the ease of it.
