Wild Rice Broccoli - Chicken Bake
2 Tbsp. margarine
½ c onion (chopped)
12 oz fresh mushrooms (sliced)
10 oz pkg. frozen chopped broccoli (thawed)
1 ½ c cooked wild rice
1 can cream of chicken soup
¼ tsp. salt
1 ½ c cooked chicken meat (chopped)
2 c Colby and Monterey jack cheese (shredded)
Heat oven to 350 degrees. In large skillet, melt margarine over
medium heat; sauté onion and mushrooms until tender (approx. 8 min.).
Remove from heat and stir in broccoli, wild rice, soup, salt, chicken
and 1 ½ cups of the cheese. Spoon into prepared glass baking dish
(use Pam or lightly butter). Sprinkle with remaining cheese. Bake,
uncovered, until heated through approx. 30 minutes.
Notes: May freeze prior to baking.
To save time, cook chicken and wild rice ahead of time and refrigerate
them until needed.
Shredded Colby and Monterey jack cheese can be bought together in
a bag.
Buy fresh mushrooms already sliced.
