Pumpkin Bars Dessert
BASE:
1 32 oz. pkg. Yellow cake mix
2 ½ cup butter
3 1 egg
PUMPKIN LAYER:
1 1 lb. Can pumpkin
2 2 eggs
3 ¼ cup sugar
4 1 to 2 tsp. Pumpkin pie spice
TOPPING:
1 cup reserved cake mix
¼ cup sugar
1 tsp. Vanilla
¼ cup butter
BASE: Combine cake mix (all but 1 cup, reserved for topping), butter,
and egg. Mix well and pour into a 9 x 13" pan.
PUMPKIN LAYER: Mix pumpkin, eggs, sugar, and spices together. Pour
over base.
TOPPING: Combine reserved cake mix, sugar, vanilla, and butter* until
crumbly. Sprinkle over pumpkin layer.
Bake at 350 degrees for 45 - 50 minutes. Serve chilled with ice cream
or Cool Whip.
NOTE: Instead of reserving 1-cup cake mix for topping, you can use
the entire box of cake mix for the base. Then use 1 to 1 ½
cups Bisquick for the topping.
* I suggest that you add the butter a little at a time. I added all
of it and had to open another cake mix to try and get a crumbly topping.
